Types of Service - Food and Beverage Division

Types of service



There are many different types of food and beverage service as followed by Hotels, Villas, Event Organizer and Cruise Ship. 

Below is the list of types of food and beverage service that we will discuss today.

  1. American Service (Plate Service) 
  2. French Service (Gueridon Service) 
  3. Russian Service (Platter Service)
  4. English Service (Family Service) 
  5. Buffet Service (Self Service) 

Explanation 

American service - plate service 

Type of service in which all the food already are cooked and prepared on the plate from the kitchen and served directly to the guest by waiter. 


American Service procedure 
  • For any kind of foods and drinks should be served from the right side by right waiter's hand
  • Clear up should be done from the right side   
  • Breads and butter should be served from the left side by silverware or silver set (bread tong) un clock wise
  • Foods from kitchen should be carried by tray and drop at side stand or side station (available inside of restaurant) before served to the guest tables. 

French Service - gueridon service 

Type of service in which all the food will be cooked or completed at side table or Gueridon trolley in the  front of the guest by two waiter which are Chef de rang and Commis de rang



French Service procedure 
  • Any food will be cooked and will be finished on the Gueridon trolley
  • Gueridon will be completed by heater, cooking equipment and cutting board 
  • Food will be cooked and prepare by Chef de rang and served to the guest by Comiis de rang
  • For any soup cooked on Gueridon trolley should be placed on soup tureen  (keep warming on heater which available on Gueridon trolley)
  • Soup ladle would be used to take soup from soup tureen to soup cup

Russian Service - platter service

Type of service which all the food are cooked and prepared in the kitchen on the platter by Chef and then served to the guest's plate which is prepared on the table by using service set by Waiter 


Russian Service procedure 
  • Foods will be cooked and prepare in the kitchen and place on the platter
  • Empty plate will be placed on the table before service starting
  • Waiter / Chef de rang will be responsible to transfer the food from the platter to the guest plate by silver set

English Service - family service 

Type of service which all the food cooked and prepared in the kitchen on platter by Chef and then put in the middle of guest table by Waiter and the guest help them selves to pick up the food after prepared by the Host 



English Service procedure 
  • Any food will be cooked and prepared in the kitchen by Chef and place on platter 
  • Any various food would be place in the middle of guest table 
  • English service will be started by the Host command 

Buffet Service  

Type of service in which all the food already cooked and prepared on buffet display with service set and the guest come to the buffet display to help themselves to pick up their food 


Buffet Service procedure 
  • Food will be cooked and prepared in the kitchen  by Chef 
  • Food will be place on buffet display, and will be warmed by main mare 
  • Guest will come directly to the buffet display and take  any food they want by themselves
