The sequence of service lunch dinner

  • Greeting and welcoming the guest 
    • Good morning/afternoon/evening/Madam/Sir
    • Welcome to our rest... 
    • How are you? / How are you doing? 
    • (Today/toning/this morning/this afternoon/this night/etc...)
  • Escorting and sitting the guest (ladies first or children priority)
    • Did you make any table reservations before?
    • Do you have a table reservation?
    • Have you got a table reservation, please?
    • How many you are? / How many people of you?
    • Have a sit please / sit down, please 
  • Unfolding the guest's napkin 
    • Make certain to lay the napkin properly. It can be done from the right or left side 
    • Make sure as well that your body does not touch the guest 
  • Pouring ice water (from right side and ladies or children priority)
    • Excuse me, Madam/Sir, may I pouring some ice water, please
    • Excuse me, Madam/Sir, would you like to have some ice water, please
    • Excuse me. Madam/Sir, some ice water, please
  • Presenting menu 
    • Try to make effort to give some menu by your hand from the right side and saying "Excuse me Madam/Sir, this is your menu, please 
  • Introduce our self 
    • Good evening ladies and gentlemen your attention please, I would like to take this opportunity to introduce myself. My name is Andi I'll be your waiter/server for the entire cruise. During the cruise, I'll be assisted by Made. Both of us come from Bali Indonesia. If anything you need please don't hesitate to call one of us and we'll be a pleasure to assist you. Well ladies and gentlemen thank you very much for your attention and hopefully, you'll enjoy your dinner/cruise, thank you. 
    • Good evening ladies and gentleman your attention please, I would like to take this opportunity to introduce myself. My name is Andi, I'll be fine to assist you this evening if you need anything please don't hesitate to call me. Well thank you so much for your attention and I hope you enjoy your dinner. 
  • Taking beverage order 
    • Excuse me  Madam/Sir would you like something to drink please besides ice water? 
    • Excuse me Madam/Sir something to drink, please
  • Serving food the beverage order 
    • Serving beverage order must be done from the right side by ladies or children first
    • When the guest asked for the wine make certain be ready such as wine opener, napkin wine, wine bucket (for white wine or rose wine)
    • When you served any beverage on the bar counter/lounge make sure that you placed a coster on the table surface on the bar. 
  • Taking food order 
    • Have you decided to order?
    • Are you ready to order?
    • What would you like to have for your dinner/lunch? 
    • What would you like to have for your starter/soup/the main course?
  • Serving the food starting from appetizer until the main course 
    • When tour served the foods make sure that guest food order is right and must be served from the right side 
    • Adjusting cover is necessary as a guest order (place proper cutleries) 
  • Crumbing down 
    • Crumbing down must be done after serving the main course. Crumber or napkin can be used for crumbling down.
  • Presenting menu & taking dessert order  
    • Presenting a dessert menu and take the order is the same as how to take the order 
    • If you can memorize and explain all the dessert available, you can take the order without presenting a dessert menu 
  • Serving the dessert 
    • Serving dessert order is the same as serving any food it should be from the right side
  • Asking for coffee or tea 
    • Coffee or tea can be served after a dessert or together with dessert 
    • Most of the American people usually having dessert with coffee or tea 
    • Excuse me, Madam/Sir would you like to have some coffee or tea? 
  • Asking for satisfaction 
    • To ensure everything in order, asking satisfaction is really important 
    • How was everything ladies & gentlemen? 
    • How is your launch or dinner? 
    • How were your lunch and dinner? 
  • Presenting the bill 
    • Presenting the bill will be done after the service 
    • Presenting the bill generally request by the guest
    • Excuse me, Madam/Sir here is your bill/this is your bill
