BRANDY
Brandy is spirits distilled from fermented fruit. It usually clocks in at 80-proof and sometimes aged in oak cask or barrels. Generally, fruit brandy and can legally be made from practically any fruit including apples, pears, apricots, blackberries, and cherries. US standard of identity define brandy as the distilled product of any fruits, but what we called brandy made from grapes. Other fruits brandy must carry the name of the fruit.

The best-known brandy is Cognac
- Cognac named after the town of cognac is France in a brandy which is produced in the region surrounding the town. It must be made from at least 90% Ugni Blanc, Folle Blanche, or Colombard grapes. However, cognac is made from Ugni Blanc only. It must be distilled twice in a pot still, still aged at least 0,5-2 years in French oak barrels.
- Armagnac is another French brandy with much the same upscale appeal. Like cognac, it comes from its own restricted region Gascony and is made from white grapes. There are several major difference between Armagnac and cognac, Armagnac makers are allowed to use any of dozen grapes varietal, their product is distilled only once, not twice like cognac, and more often in a column still than a pot still.
- Fruit Brandies, calvados is a fine apple brandy from France. By law, it can bear the calvados name if it is made in the province of Normandy. Calvados begins as cider and is distilled and aged in wooden barrels, calvados may be aged for many years, but most important are aged 5-10 years.
- Other Brandies, Brandy de jerez from pain was not taken seriously or consumed on their own, however, they were made to fortify sherry for which Spain is famous. Metaxa from the greek, slightly sweetened and with herbs added, it is technically a liqueur but generally thought of as brandy.
