Vegetarian Appetizer

Everyone take an appetizer before getting the main course or soup, yes to stimulate your appetite. But, how is it if you have vegetarian people? there are many choices of vegetarian appetizers, and below are some of them 






Mezze Platter 

yogurt cheese with citrus spicy marinated olives bobaganoush mint cucumber relish, fried halloumi cheese, tomato, and pita chips 






Green Tomato Toast with Ricotta Salsa

Top with super fresh green tomatoes that suit one's taste. This toast combines sharp ricotta Salata cheese with plump green tomatoes and lemon  juice for refreshing bites




Avocado cups with Pomegranate 

These avocado cups come alive with mixed cilantro, mint, pomegranate seeds, lemon juice, and preserved lemon peel.  Spoon the mixture into the cups, sprinkle with flaky sea salt, and enjoy it. 



Carrot tart

Carrot looks beautiful in this tart and combines with onions, parsnips, beets, and zucchini, or pumpkins. The key is to cook vegetables before putting them on the tart since the moisture released by baking raw vegetables would make the puff pastry soggy and prevent it from raising. Once you remove the tart from the oven, let it cool for 10 minutes before cutting to allow the cheese to firm up slightly. The tart can be served warm, or cooled to room temperature, and would make a great addition to a picnic 




Garlic ricotta 

Combine the mashed garlic, ricotta, and lemon juice. Stir well. Bake until lightly browned, and top with parsley, black pepper, and remaining olive oil.
